Method

Coronation chicken

  1. Step 1

Add the mayonnaise (100 g), mango chutney (30 g), curry (8 g) powder, yoghurt (30 g) and lemon juice (15 ml) to a bowl and mix until smooth.

  2. Step 2

Add the chopped chicken (300 g), coriander (5 g) and sultanas (15 g) and fold together until evenly coated.

  3. Step 3

Season to taste with salt and plenty of black pepper.

  4. Step 4

For the best flavour, cover and refrigerate for 20-30 minutes before serving.

Tuna mayo & sweetcorn

  1. Step 1

Drain the tuna (290 g) well and place it in a bowl. Flake it gently with a fork.

  2. Step 2

Add the mayonnaise (100 g), sweetcorn (75 g), lemon juice (15 ml), red onion and parsley (5 g).

  3. Step 3

Mix gently until combined, taking care not to turn the tuna (290 g) into a paste.

  4. Step 4

Season to taste with salt and plenty of black pepper.

Egg mayo

  1. Step 1

Place the eggs (6 eggs) in a saucepan and cover with cold water. Bring to the boil, then cook for 9 minutes.

  2. Step 2

Transfer the eggs (6 eggs) to iced water and leave to cool completely.

  3. Step 3

Peel the eggs (6 eggs) and roughly chop them, keeping some larger pieces for texture.

  4. Step 4

Add the mayonnaise (100 g), Dijon mustard (5 g) and chives (5 g) and gently fold together.

  5. Step 5

Season with salt and freshly ground black pepper.

Prawn cocktail mayo

  1. Step 1

Pat the prawns (250 g) dry with kitchen paper to remove any excess moisture.

  2. Step 2

Mix the mayonnaise (100 g), ketchup (30 g), horseradish sauce (10 g), Worcestershire sauce (5 ml) and lemon juice (15 ml) together in a bowl.

  3. Step 3

Add a pinch of cayenne pepper, chopped chives (5 g) and season with salt and black pepper.

  4. Step 4

Fold through the prawns (250 g) and chopped chives (5 g) until evenly coated.

  5. Step 5

Cover and refrigerate until ready to use.

Cheese savoury

  1. Step 1

Add the grated Cheddar (150 g), carrot (75 g) and finely diced onion to a bowl.

  2. Step 2

    Add the mayonnaise (100 g), English mustard (5 g), lemon juice (15 ml) and parsley (5 g).

  3. Step 3

Mix together until everything is evenly coated.

  4. Step 4

Season to taste with salt and plenty of freshly ground black pepper.

  5. Step 5

If your onion is particularly strong, soak it in cold water for 5 minutes, then drain and dry thoroughly before adding.

Chicken Caesar mayo

  1. Step 1

Add the mayonnaise (100 g), Parmesan (40 g), Dijon mustard (5 g), lemon juice (15 ml), Worcestershire sauce (5 ml) and garlic to a bowl.

  2. Step 2

Mix together until smooth and season generously with freshly ground black pepper.

  3. Step 3

Add the chopped chicken (300 g) and fold through until evenly coated.

  4. Step 4

Taste and adjust the seasoning if needed.

  5. Step 5

Serve in the sandwich with crisp romaine lettuce. Add extra Parmesan (40 g) and crispy bacon if you like.

Questions people ask

How many does it serve, and can I change that?

As written it serves 4. Use the scale control on the recipe card to change it: every quantity in the ingredients and inside the method steps updates with it. Seasoning, and anything measured in pinches or splashes, is deliberately left alone.

Can I see the ingredients in ounces and pints?

Yes. The metric and imperial switch on the recipe card converts every quantity, rounded to amounts you can actually weigh or measure rather than to four decimal places. Your choice is remembered for every recipe on the site.

Can I cook it ahead?

This one sits in the batch cooking group, which means it was picked for cooking in quantity rather than eaten straight from the pan. Cool it quickly, and freeze it in the portion sizes you will actually want later.

Is it vegetarian?

Yes, as written. If you are cooking for a strict vegetarian, the one to check is the cheese: several hard cheeses are made with animal rennet.
