Coconut Fish Curry


Ingredients


Serves 4


Curry Paste

3 x Garlic Cloves

25g x Fresh Ginger

1 x Red Chilli

20g x Carriander (stalks included)

1 x Small Onion or Shallot

5g x Mild Curry Powder

4g x Turmeric

2g x Ground Cumin

pinch of Salt 

50ml x Water


Curry


500g x Cod Fillets

400ml x Coconut Milk

10ml x Soy Sauce

20g x Sugar

Juice of 1 Lime


To Garnish


Sliced Chillies

Fresh Coriander

Lime wedges


Method


  1. To make the curry paste, roughly chop the garlic, fresh ginger, chilli (leave the seeds in if you like it hotter), and onion. Add the remaining curry paste ingredients to a blender and blend. 


  1. Cut the fish into large chunks. Place a frying pan or skillet over medium heat and pour in the curry paste. Heat up and cook for 3 to 5 minutes to release the flavours. 


  1. Next, stir in the coconut milk and bring it to a simmer. Add the sugar, soy sauce, and lime juice. Simmer for 5 more minutes.


  1. Place the fish into the pan and gently poach in the simmering curry for 5 more minutes or until the fish flakes away easily.


  1. Serve and finish with more fresh chilli, coriander and a lime wedge.
