The BEST Crispy Garlic Green Beans
Ingredients
360g x Green Beans
1 x Bulb of Garlic
100ml x Neutral Flavoured Oil (vegetable oil, sunflower oil, avocado oil)
200ml x Chicken Stock
5ml x Soy Sauce
5g x Sugar
Method
Prepare the green beans by cutting the stalk from the top (if needed) and halving them lengthways.
Peel 1 full bulb of garlic, thinly slice most of it and roughly chop 3 cloves to use in the recipe later.
Place the sliced garlic into a saucepan and add the oil. Place over low heat and cook until the garlic turns golden and crisp. Immediately remove from the heat and drain through a sieve. You will be left with garlic-infused oil and garlic crisps.
Place a wok or sauté pan over high heat and add 1 tablespoon of the garlic oil. Once Hot, add the green beans and stir-fry for 3 minutes. Then add the chicken stock, soy sauce, and sugar. Bring to a simmer and add the chopped garlic. Cook until the stock reduces by half and remove from the heat. Season to taste with more soy sauce if needed.
To serve, pile the green beans high onto a plate and drizzle over the chicken stock from the pan. Finish with the golden garlic crisps.
