Spicy Buttermilk Fried Chicken Sandwich (With Homemade Chipotle Hot Honey Sauce)

Let me show you how to make this delicious Spicy Buttermilk Fried Chicken Sandwich (With Homemade Chipotle Hot Honey Sauce). We start by making a spicy buttermilk marinade and a spiced flour coating before frying until golden brown and crisp. We then make a smokey, rich and sticky chipotle hot honey sauce to coat our chicken in, resulting in the best chicken sandwich you will ever taste!

Spicy Buttermilk Fried Chicken Sandwich (With Homemade Chipotle Hot Honey Sauce)


Makes 4


Ingredients


The Chicken & Marinade


2 x Chicken Breast

300ml x Buttermilk

1 tsp x Smoked Paprika

1 tsp x Cayenne Pepper

1 tsp x Garlic Powder

1 tsp x Salt

1 tsp x Ground Black Pepper


The Spiced Coating


50g x Cornflour (cornstarch)

100g x Plain Flour (all-purpose flour)

1 tsp x Smoked Paprika

1 tsp x Cayenne Pepper

1 tsp x Garlic Powder

1 tsp x Salt

1 tsp x Ground Black Pepper

Oil For Deep Frying


Chipotle Hot Honey Sauce


100ml x Tomato Passata

70g x Runny Honey

1 tsp x Chipotle Crunch, Chilli Crisp or Chilli Flakes

1 tsp x Garlic Powder

1 tsp x Smoked Paprika

50g x Unsalted Butter

Salt & Black Pepper To Taste


Garlic Mayonnaise


60g x Mayonnaise

1 x Clove of Garlic (Minced)

1/2 tsp x Dried Oregano 


To Serve


4 x Burger Buns

2 to 3 x Pickled Gherkins

Shredded Lettuce of Choice 


Method


1. Begin by butterflying the chicken breast and then cut in half to create two fillets from each breast. For the buttermilk marinade, place the buttermilk into a mixing bowl and add in the spices. Whilst together until fully combined. Add in the chicken. Cover and place into the fridge for 1 hour or ideally overnight. 


2. To make the spiced flour coating, place all ingredients into a bowl and mix until they’re fully incorporated. 


3. To coat the chicken, take each fillet from the buttermilk and dust it in the flour mixture. One coating is fine however I like to dip it back into the buttermilk and into the flour a second time for a stronger and crispier crust. 


4. To make the sauce, place a pan over medium heat and add in the tomato passata followed by the honey, chipotle crunch/chipotle chilli flakes, garlic powder, and smoked paprika. Mix before adding in the butter. Heat until the butter melts and is incorporated into the sauce, season to taste with salt and pepper and remove from the heat. 


5. Place a large pan over medium-high heat suitable for deep frying and fill it halfway with your chosen frying oil. I’m using sunflower oil here.  Heat it to around 180°C.


6. While the oil is heating, make a quick garlic mayonnaise by combining the mayonnaise, minced garlic and dried oregano and mixing well. 


7. Place the coated chicken into the hot oil in batches and cook for 8 minutes until golden and crisp. 


8. Next, place the fried chicken into the chipotle hot honey sauce until all of the chicken is fully coated.


9. To assemble, toast your burger buns and place some garlic mayonnaise on each side. Then some of the shredded lettuce on the bottom followed by the crispy, glazed chicken and finish with sliced pickled gherkin.
