My Favourite Burrata Recipe | with Juicy Summer Peaches

My Favourite Burrata Recipe | with Juicy Summer Peaches


Ingredients


3 x Ripe Peaches (+small drizzle of olive oil)

1 x Burrata Cheese

6 x Prosciutto Ham Slices

20g x Rocket Leaves

Drizzle of Extra Virgin Olive Oil

20g x Pine Nuts

Salt & Black Pepper to taste


Balsamic Glaze

200ml x Balsamic Vinegar


Method


1. Begin by pouring the balsamic vinegar into a small saucepan. Place over high heat and reduce it by two-thirds or until you have a balsamic syrup. Remove from the heat until you're ready to use it. 


2. Half the peaches and remove the stones. Place a griddle or frying pan over high heat. Brush the peaches with a little oil before placing them face-side down in the hot pan until they caramelise and char. Flip them over and put them into a preheated oven at 180°C Fan for 10 minutes. 


3. Toast your pine nuts in another dry, hot frying pan until golden or do this on a baking tray in the oven.  


4. Dress the rocket leaves with a drizzle of extra virgin olive oil and a pinch of salt and pepper. 


5. To serve, place the dressed rocket leaves onto a plate or platter and place the burrata into the centre. Next, place the charred peaches around the outside and weave the sliced prosciutto ham between them. Finally, finish with a drizzle of balsamic glaze and sprinkle of toasted pine nuts.
