Method
Cut the monkfish into large bite-sized pieces and place them into a bowl. Add in the zest and juice of a lime, the garlic, coriander, olive oil and a pinch of salt and black pepper. Mix and leave in the fridge until ready to use.
To make the mango salsa, place the prepared ingredients into a bowl and mix until well combined.
For the avocado puree, place the ingredients into a blender and blend until smooth. Season to taste with salt and black pepper.
To cook the monkfish, place a frying pan over medium heat and allow it to heat up for 2 minutes. Add in the monkfish leaving most of the marinade behind in the bowl. Cook for 2 to 3 minutes on each side until completely cooked through and lightly charred on the outside.
To serve place some lettuce onto the centre of a tortilla and spoon over the avocado cream. Next, place on 2 or 3 pieces of monkfish and a spoonful of mango salsa. Finish with a squeeze of lime and some fresh coriander.
Enjoy!
