How to Make Chocolate Brownies


6 x Servings 


Ingredients


125g x Unsalted Butter

125g x Dark Chocolate (minimum 50% cocoa solids)

125g x Light Brown Sugar

3 x Eggs

75g x Self-Raising Flour

Pinch of Sea Salt

100g x Milk Chocolate Chunks


Method


1. Place the butter into a saucepan and melt over low heat. Once melted, take off the heat immediately and add in the dark chocolate. Stir off the heat until the chocolate has fully melted. 


2. Crack your eggs into the mixing bowl of a stand mixer (you can use a hand mixer for this) and add in the light brown sugar. Whisk on high until it has doubled in size, pale in colour, and is light and fluffy. 


3. Pour the egg and sugar mixture into the chocolate mixture and gently fold it in until it is fully incorporated. 


4. Next, sift in the self-raising flour into the brownie mixture and add a pinch of salt. Fold the flour in until it is fully mixed in. 


5. Now, stir in the milk chocolate chunks. You can add, nuts and dried fruit at this stage if you like. 


6. Pour the brownie mixture into a baking tray/pan lined with parchment paper and bake in a preheated oven at 170°C for 30 to 50 minutes depending on how fudge or cakey you like your chocolate brownie. I like to bake mine for 40 minutes. 


7. Serve warm with, cream, custard, salted caramel, or ice cream and enjoy!
