Easy One Pot Creamy Green Lentil Dahl | Vegan & Vegetarian Recipe
Creamy Green Lentil Dahl
Serves 4
Ingredients
1 x Brown Onion
4 x Cloves of Garlic
25g x Fresh Ginger
20ml x Olive Oil
1 tsp x Mustard Seeds
400g x Chopped Tomatoes
200ml x Water
1 tsp x Ground Cumin
1/2 tsp x Chilli Flakes
1 Tbsp x Garam Masala
1 tsp x Turmeric
200g x Dried Green Lentils
400ml x Coconut Milk
Salt & Black Pepper to Taste
Juice of 1 Lime
Fresh Coriander for Garnish
Method
1. Peel and dice the onion, peel and thinly slice the garlic cloves and peel and grate the ginger on a microplane.
2. Place a sauté or frying pan over medium heat and drizzle in the olive oil, then add in the diced onions followed by a pinch of salt and cook for 5 minutes until soft. Next, add in the garlic and ginger and cook for 1 minute. Then add in the mustard seeds and cook for a further 1 minute.
3. Add in the chopped tomatoes and 200ml of water, stir and bring to a simmer before adding the cumin, chilli flakes, garam masala, and turmeric. Stir and add in the lentils.
4. Next, pour in the coconut milk and bring to a simmer, place a lid on and cook for 40 minutes stirring every 10 minutes during the cooking.
5. Season to taste with salt and black pepper and stir through the juice of 1 lime. Finish with fresh coriander. Serve with rice or flatbread and enjoy!
