Creamy White Wine and Leek Mussels | How to Clean and Cook Them


Serves 2


Ingredients


400g x Mussels 

15g x Unsalted Butter

10ml x Olive oil

1 x Leek

2 x Cloves of Garlic

10g x Parsley

120ml x White Wine

100ml x Cream

Salt & Black Pepper (to taste)


Method


  1. Begin by checking and cleaning the mussels (See video for reference).


  1. Next, Cut the leek in half and give it a good wash. Then, slice it up as thin as you can. Peel and roughly chop the garlic and roughly chop the parsley.


  1. Place a pan over medium heat and add the butter and oil. Once the butter melts place in the sliced leeks, followed by a pinch of salt. Sweat them down for 3 to 5 minutes until soft. Add in the garlic and cook for one more minute.


  1. Pour in the wine and bring it to a simmer before adding in the chicken stock. Once simmering again, add in the cream and bring that up to a simmer. Grind in some black pepper before placing in the mussels. Cover with a lid and steam for 3 to 4 minutes. Once all the mussels are open, they are ready to eat. Stir through half of the parsley. 


  1. Serve in a bowl with crusty bread and enjoy!
