Cook Brussels Sprouts in 3 Ways

Note: In each recipe, the sprouts are already blanched. Here’s how to do it. Place your prepped sprouts into a pan of salted boiling water. Cook for 4 to 5 minutes with a lid on. Immediately stop the cooking by plunging them into iced water. Drain, and we can begin our 3 recipes.

Buttered Leek Sprouts with Garlic

Ingredients

400g x Blanched Sprouts

1 x Leek

3 x Cloves of Garlic

65g x Unsalted Butter

Salt & Black Pepper to Taste

Method

  • Cut the leek in half lengthways and wash thoroughly. Slice into 1cm slices. Next, peel the garlic cloves and thinly slice them.

  • Place a frying pan over medium heat and add half of the butter. Once melted add in the sliced leeks followed by a pinch of salt and cook for 5 minutes until soft. Add in the sliced garlic and cook for a further 5 minutes.

  • Place in the blanched sprouts and stir them through the leeks and garlic, heating them for 4 to 5 minutes. Add in the remaining butter and season to taste with salt and black pepper. Serve and enjoy!

Smoky Bacon Sprouts with Nuts

Ingredients

400g x Blanched Sprouts

8 x Rashers of Smoky Streaky Bacon

1 x Medium Red Onion

50g x Mixed Nuts

30g x Butter

Salt & Black Pepper to Taste

Method

  • Begin by cutting the bacon into slices, finely dicing the red onion, and roughly chopping the mixed nuts.

  • Place a frying pan over medium heat and add in the butter. Once melted place in the sliced bacon and cook until it begins to crisp up. Add the diced red onion and mixed nuts and turn the heat to low. Cook for 4 to 5 minutes until the red onion is soft.

  • Add in the blanched sprouts and stir them through the bacon, red onion and nuts for 5 minutes until hot throughout. Season to taste with salt and black pepper. Serve and enjoy!

Crispy Parmesan Sprouts with Garlic & Chilli

Ingredients

400g x Blanched Sprouts

30ml x Extra Virgin Olive Oil

Salt & Black Pepper

1/2 tsp x Chilli Flakes

80g x Parmesan

1/2 tsp x Ground Garlic

5g x Fresh Thyme Leaves

Method

  • Preheat the oven to 190°C Fan. Next, cut the blanched sprouts in half and place them into a mixing bowl. Drizzle with the extra virgin olive oil, a pinch of salt and black pepper and the chilli flakes. Mix until the sprouts are thoroughly coated.

  • Line a baking tray with parchment paper and finely grate over most of the parmesan cheese creating a thick layer on the bottom of the tray and keeping a little bit back for later. Sprinkle the ground garlic on top of the parmesan and then the thyme leaves.

  • Place the sprouts flat side down on top of the parmesan creating an even layer. Grate a little more parmesan over the sprouts and place into the preheated oven for 20 to 25 minutes or until the parmesan is crispy and the sprouts are slightly charred on the outside. Serve and enjoy!
