This easy cheese and tomato stuffed flatbread with no yeast is ready in under 30 minutes — perfect for a quick snack or meal! No fancy ingredients, just big flavour. Let’s get cooking!

Cheese and Tomato Stuffed Flatbread | IN 30 MINUTES OR LESS


Makes 4


Ingredients


Flatbread Dough


200g x Self-Raising Flour

180g x Greek Yoghurt

3g x Salt

10ml x Olive oil


The Filling


100g x Cherry Tomatoes (cut into quarters)

1/4 x Medium Red Onion (diced)

3g x Basil (roughly chopped)

100g x Grated Mozzarella

60g x Ricotta 

Salt & Black Pepper (to taste)


Method


  1. To make the dough, combine all ingredients in a mixing bowl and mix to form a dough. Turn out onto a workbench and knead for 5 minutes or until smooth. Leave to rest while you make the filling. 


  1. Place all ingredients into a bowl and mix until well combined. Season to taste with salt and pepper.


  1. Cut the dough into 4 equal-sized pieces and roll them into balls. Then, roll each one out using a rolling pin until it is 3 mm thick.


  1. Share the filling out in the centre of each piece of dough. Then, pull the sided into the centre and pinch at the top until the filling is fully concealed. 


  1. Place a frying pan over low heat. Once the pan is hot, cook the flatbread for 4 minutes on each side. Serve and Enjoy!
