Ingredients

Serves 4

6 x Pork Sausages

1 x Large Brown Onion (or 2 small)

2 x Cloves of Garlic (chopped or grated)

2 x Rosemary Sprigs

1/4 tsp x Chilli Flakes

1 tsp x Paprika

800g x Chopped Tomatoes

200ml x Double Cream

30g x Parmesan (grated)

150g x Cherry Tomatoes

30g x Basil (leaves picked)

350g x Dried Pasta

Salt & Black Pepper

Method

  1. For the prep, remove the sausage meat from its casings, break it up into small pieces, and set it aside. Cut the onion into small dice, finely grate, chop, or crush the garlic, finely chop the rosemary leaves, and cut the cherry tomatoes in half.

  1. Place a large pan over medium-high heat. Once hot, add in the sausage meat and cook for 5 minutes until cooked through. Remove from the pan onto a plate and add the diced onion into the pan followed by a pinch of salt. Turn the heat to low and cook for 5 minutes until soft.

  1. Next, add in the garlic, rosemary, chilli flakes, and paprika and cook for 1 more minute. Add in the chopped tomatoes along with one small glass of water, stir, and bring to a simmer. Add the cooked sausage meat back into the sauce followed by the cream. Stir and season to taste with a pinch of salt and black pepper. Bring the sauce to a simmer, place a lid on and cook for 20 minutes.

  1. At this stage, you will have time to cook your chosen pasta to the packet instructions. Once you add your pasta into the water, turn your attention back to the sauce. Remove the lid and add in the halved cherry tomatoes. Leave the lid off until the pasta is ready.

  1. Just before your pasta is ready, take the sauce from the heat and stir through the grated parmesan and basil leaves. Mix the cooked pasta through the sauce and serve with an extra grating of parmesan, grind of black pepper, and basil leaves.

Enjoy!
