Garlic Parsley & Lemon Butter Ingredients 340g x Butter 30g x Flat Leaf Parsley Leaves 2 x Cloves of Garlic (Peeled) Zest of 1 Lemon Juice of Half a Lemon Salt & Black Pepper to Taste 1. Blanch the parsley leaves in boiling water for 10 seconds and immediately refresh in ice water to lock in a vibrant green colour. Squeeze out as much water as possible before using. 2. Place the butter, blanched parsley leaves, garlic, lemon zest, lemon juice and salt and black pepper into a food processor or you can use an immersion blender for this and blend together until is as smooth as possible. 3. Wrap it up and place into the fridge for up to 1 week or freezer for up to 3 months. #garlicbutter #flavouredbutter #compoundbutter

140g x Plain/All-Purpose Flour 1tsp x Bicarbonate of Soda 1/2 tsp x Baking Powder Pinch of Salt 1 x Egg 140ml x Buttermilk 1 tsp x Vanilla Extract Butter or oil for cooking Method 1. Place all ingredients into a mixing bowl and whisk until smooth. This will be a much thicker batter than the British-style pancakes. Cover and rest in the fridge until ready to use. 1. Place a frying pan over medium heat and add a little butter or oil for cooking. Place in some of the batter and form it into a small round shape using the back of a ladle. You can also add some fresh berries here before flipping if you like. Cook for two minutes on each side. British-style Pancakes Makes 4 to 6 Ingredients 75g x Plain/All-Purpose Flour Pinch of Salt 1 x Egg 5ml x Vanilla Extract (optional) 150ml x Milk Butter or oil for cooking Method 1. Place all ingredients into a mixing bowl and whisk until smooth. The mixture should be the consistency of pouring cream. Cover and rest in the fridge until ready to use. 2. Place a frying pan over medium heat and add a little butter or oil. Once hot, ladle in your pancake batter and swirl it around the pan until it covers the full surface area. Crispy Garlic Green Beans Ingredients 360g x Green Beans 1 x Bulb of Garlic 100ml x Neutral Flavoured Oil (vegetable oil, sunflower oil, avocado oil) 200ml x Chicken Stock 5ml x Soy Sauce 5g x Sugar Method 1. Prepare the green beans by cutting the stalk from the top (if needed) and halving them lengthways. 1. Peel 1 full bulb of garlic, thinly slice most of it and roughly chop 3 cloves to use in the recipe later. 1. Place the sliced garlic into a saucepan and add the oil. Place over low heat and cook until the garlic turns golden and crisp. Immediately remove from the heat and drain through a sieve. You will be left with garlic-infused oil and garlic crisps. 1. Place a wok or sauté pan over high heat and add 1 tablespoon of the garlic oil. Once Hot, add the green beans and stir-fry for 3 minutes. Then add the chicken stock, soy sauce, and sugar. Bring to a simmer and add the chopped garlic. Cook until the stock reduces by half and remove from the heat. Season to taste with more soy sauce if needed. 1. To serve, pile the green beans high onto a plate and drizzle over the chicken stock from the pan. Finish with the golden garlic crisps and enjoy! #crispygarlicgreenbeans #greenbeans #recipe

Roast Potatoes with Rosemary & Thyme Sea Salt Ingredients 1kg x Potatoes (Red Skin Variety) 1tsp x Salt 1tsp x Bicarbonate of Soda Cold Water 100g x Goose Fat or Duck Fat Rosemary & Thyme Sea Salt 10g x Sea Salt 7g x Fresh Rosemary (leaves picked) 5g x Fresh Thyme (leaves picked) Method 1. Peel the potatoes and cut them into equal-sized pieces. I recommend cutting them in half or quarters but try to make them all a similar size. 1. Place the potatoes in a saucepan, add the salt and bicarbonate, and top it up with cold water until the potatoes are covered. Place over high heat and bring to a boil. Once boiling, turn it down to low and simmer for 20 to 25 minutes until the potatoes are completely cooked through. 1. Gently remove them from the water and place them onto a cooling rack. 1. Place the goose/duck fat onto a baking tray and into a preheated oven at 180°C Fan for 10 minutes. Once hot, place the potatoes into the fat and roll them around. Place back into the oven for a total cooking time of 45 minutes, turning them around every 15 minutes - two turns in total. 1. To make the Rosemary and Thyme Sea Salt. Add the ingredients into a mortar and pestle and grind them together until the herbs break down and you have a bright green fine sea salt mixture. 1. Remove the potatoes from the oven and season them with the rosemary and thyme salt. Enjoy! #roasties #roastpotatoes #potatorecipe
