How I Make Battenberg Cake

Battenberg Cake makes 8 to 10 Slices Ingredients 200g x Soft Unsalted Butter 200g x Caster Sugar 4 x Eggs 200g x Self-Raising Flour 1tsp x Vanilla Bean Paste or Vanilla Extract Red or Pink Food Colouring Filling & Decoration 170g x Apricot Jam 1 x Pack of Marzipan Icing Sugar for Dusting Method 1. Preheat the oven to 150°C fan and grease and line two loaf tins with parchment paper. 2. Using a stand mixer with the paddle attachment, cream together the butter and sugar until light and fluffy. This will take 3 to 5 minutes. You can also use an electric hand whisk for this. Mix in the eggs and vanilla until fully incorporated. Sift and fold in the flour. 3. Split the batter into two halves and colour one half with food colouring until it is a nice shade of pink. Place the pink batter in one tin and the plain batter in another and spread out using a spatula.    4. Place into the preheated oven and bake for 35 to 40 minutes or until a skewer comes out clean. Cool on a wire rack. 5. Cut each cake in half lengthways and cut off the crusts aiming to create 4 long rectangle shapes (2 of each colour). 6. Warm the apricot jam in a saucepan and pass through a sieve. 7. Dust the workbench with icing sugar and roll out the marzipan to 2mm in thickness making sure it's big enough to cover the whole cake. Brush with the apricot jam. 8. Build the cake in the centre of the marzipan brushing each piece on all sides with jam. Wrap the cake with the marzipan allowing it to overlap slightly and trim off the excess. 9. Slice, Serve and enjoy! #battenberg #cake #recipe

One Pot Paprika Lemon Chicken Orzo Recipe

One Pot Paprika Lemon Chicken Orzo Serves 4 Ingredients 8 x Chicken Thighs (skinless & boneless) 10ml x Olive Oil 4 x Cloves of Garlic 8g x Paprika 1 x Small Brown Onion 300g x Orzo Pasta 800ml x Chicken Stock 240g x Fresh Spinach 35g x Parmesan (grated) Zest & Juice of 1 Lemon Salt & Black Pepper to Taste Lemon Slices & Grated Parmesan to garnish Method 1. In a bowl, add the chicken, oil, pinch of salt and black pepper, two cloves of crushed garlic and the paprika. Mix until the chicken is fully coated. Set to one side. 2. Next, dice the onion and finely grate or crush the two remaining garlic cloves. 3. Place a large sauté pan over medium-high heat and once hot place in the chicken. Sear on both sides for two minutes or until golden. Remove from the pan onto a plate. 4. In the same pan, turn the heat to low and add the diced onion followed by a pinch of salt. Gently cook the onions until soft for 4 to 5 minutes. Add in the garlic and cook for one 1 more minute. Next, add in the orzo and stir. 5. Pour in the chicken stock and bring to a simmer. Stir through the parmesan and place the spinach into the pan. Cover with a lid and allow the spinach to wilt down for 2 minutes. 6. Place the chicken back into the pan along with any resting juices and squeeze in the juice of 1 lemon. Stir and place the lid back on and cook for 8 minutes or until the orzo is cooked to your liking. Season to taste. 1. Remove from the heat and finish with the zest of one lemon. Garnish with lemon slices and extra parmesan if you like. Enjoy! #onepotmeal #onepot #orzo

How I Make Bolognese Hotpot

Bolognese Hotpot Serves 6 Ingredients Bolognese Sauce 30ml x Olive Oil 1 x Medium Brown Onion (diced) 1 x Carrot (peeled & diced) 1 x Stick of Celery (diced) 2 x Cloves of Garlic (crushed, diced or grated) 750g x 50/50 Pork & Beef Mince 30g x Tomato Puree 500ml x Beef Stock 500g x Tomato Passata or Chopped Tomatoes 2 x Bay Leaves Salt & Black Pepper to taste The Potato Topping 600g x Potatoes (thinly sliced) 3 x Cloves of Garlic (thinly sliced) Fresh Thyme (optional) 80g x Melted Butter Salt & Black Pepper to taste Method 1. Place a large sauté pan or pot over medium-low heat and drizzle in the olive oil. Then, add the diced onion, carrot, and celery, followed by a pinch of salt. Cook for 4 to 5 minutes until soft, then add the garlic and cook for 1 more minute. 1. Next, add the pork and beef mince and cook until browned. Add the tomato puree and mix it before pouring in the beef stock. You can also add some red wine here if you like. Bring it to a simmer and add in the tomato passata or chopped tomatoes. Season with salt and pepper, cover and leave to simmer over low heat for 30 minutes. 1. After 30 minutes, create an even layer of potatoes on top of the bolognese sauce and brush with the melted butter.Spread out the sliced garlic, thyme leaves and season with salt and pepper. Repeat until you have used up all of the potato. 1. Place into a preheated oven at 190°C Fan for 50 minutes until golden and crisp on top. Serve and enjoy! #bolognesehotpot #bolognese #onepotmeal

Chicken Caesar Wrap

Crispy Chicken Caesar Wrap Makes 2 Ingredients 2 x Tortilla Wraps 60g x Romaine Lettuce (roughly chopped) 20g x Parmesan or Cheddar Cheese (optional) The Chicken Ingredients 1 x Chicken Breast 3g x Garlic powder Pinch of Salt & Black Pepper 1 x Egg 50g x Plain/All Purpose Flour 40g x Panko Breadcrumbs Oil for deep frying Method 1. Begin by butterflying the chicken breast open and cutting it into two halves. Then, cut each half into 1cm strips. Place the strips in a bowl and add the ground garlic and a pinch of salt and pepper. 1. Next, place the flour in one bowl, crack the egg into another and place the breadcrumbs onto another bowl or plate. Whisk the egg, you can add a splash of milk to this to loosen it up but it's not essential. Place the chicken into the flour first, then the egg and then the breadcrumbs. Repeat until all of the chicken is fully coated. Leave to one side while you make the dressing. Caesar Dressing Ingredients 20ml x Lemon Juice 5g x Dijon Mustard 1 x Clove of Garlic 2 x Anchovies 50g x Yoghurt 30g x Mayonaise 20g x Parmesan or cheddar cheese Salt & Black Pepper to taste 1. Place all ingredients into a food processor and blend until smooth. Adjust the seasoning with lemon juice, salt and pepper if needed. To Cook The Chicken * Place a large pan suitable for deep frying and fill it 2 inches in depth with oil. Heat to 180°C and fry the chicken for 5 minutes until golden brown and cooked throughout. To Assemble The Wrap 1. Warm your wraps in a frying pan for 30 seconds on each side and then dress the lettuce with half of the dressing. Mix until fully coated. You can add the 20g of grated cheese here too if you like. 1. Place half of the lettuce onto each wrap and then share the fried chicken over the two wraps. Drizzle with the remaining dressing and roll up your wraps. Serve and enjoy! #chickencaesarwrap #chickenwraps
