Glazed Ham

Honey Mustard Glazed Ham with Orange Ingredients 1x Gammon Joint (mines 2kg) 1x Medium Brown Onion 1 x Carrot 1 x Parsnip 1 x Bulb of Garlic 2 x Bay Leaf 2 x Star Anise 1 tsp x Cloves 1 tsp x Black peppercorns Sprig of Sage Water For The Glaze 150g x Runny Honey 50g x Wholegrain Mustard Juice of 1 Orange or 3 Satsumas Method 1. Cut the onion into quarters (skin on), carrot into 4 or 5 chunks, the same again with the parsnip and cut the bulb of garlic in half. 2. Place the gammon joint into a large saucepan and add in the chopped vegetables, bay leaf, star anise, cloves, black peppercorns and sage. Cover the pan with cold water until the ham is covered by 2 to 3 inches. 3. Place over high heat and bring it to a boil. Once boiling, reduce to a simmer and cook for 20 minutes for every 500g/1lb. My joint was 2kg so I cooked it for 80 minutes. 4. To Make the glaze mix the runny honey, wholegrain mustard and orange juice until fully combined. Leave to one side until ready to use. 5. Once the ham is cooked, preheat the oven to 180°C Fan. Take the ham from the pan (you can discard the water vegetables and spices) and remove the skin, leaving a decent layer of fat. Score the fat with a knife in a crisscross fashion and this is the stage where you can stud it with cloves if you like. 6. Place it into the preheated oven for 15 minutes. After 15 minutes spoon over 1/3 of the glaze and place it back into the oven. Repeat this 2 more times until you've used up all of the glaze. Take it from the oven one more time, baste it with the sticky glaze that is on the baking tray and place it back into the oven for a final 5 minutes. 7. Remove from the oven and cool for at least 10 minutes before carving. Enjoy! #ham #glazedham #christmas

Chicken Liver Parfait Recipe

Chicken Liver & Port Parfait Ingredients Port Reduction 40g x Unsalted Butter 2 x Shallots (sliced) 1 x Clove of Garlic (sliced) Pinch of Salt 2 to 3 x Sprigs of Thyme 1/2 tsp x Black Peppercorns 100ml x Port Pate 340g x Chicken Livers (trimmed) 1 x Egg 90g x Unsalted Butter (Diced at Room Temperature) Pinch of Salt Method 1. To Make the port reduction, place a frying pan over low heat and add in the butter. Once melted, place in the sliced shallots, sliced garlic, pinch of salt, few sprigs of thyme and cook down over low heat for ten minutes until soft. Next, add in the peppercorns followed by the port. Bring it to a simmer and reduce the liquid by half the amount. Remove from the heat and pass it through a sieve. Discard the shallots and keep the liquid, place to one side to cool. 1. Preheat the oven to 85°C Fan. 1. Clean/trim your chicken livers by removing any fatty/sinew-looking bits. Roughly chop the liver and place it into a food processor or blender. Crack in 1 egg and pour in the port reduction. Blend until smooth. Now, keep the blender running and gradually add in the diced room-temperature butter. Add it slowly so it can emulsify with the liver mixture. Once fully incorporated, season with a good pinch of salt and blend one last time. 1. Next, pass the chicken liver parfait mixture through a sieve before pouring it into your chosen ramekins or dish. Place onto a larger tray and fill it halfway with boiling water before placing it into the oven for 35 minutes. 1. Remove from the oven and leave to cool at room temperature before placing into the fridge to cool completely. 1. Serve it with sourdough croutons, toasted brioche, fresh bread, crackers, salad and homemade chutney for a starter that's sure to impress! Enjoy! How I Make Easy Chocolate Truffles From Scratch Get creative when making these delicious truffles and experiment with loads of different toppings! Enjoy! Chocolate Truffles Makes 25 Truffles Ingredients 250g x Dark Chocolate (70% Cocoa Solids) 170ml x Double/Heavy Cream 15g x Unsalted Butter 1tsp x Vanilla Extract Toppings Cocoa Powder, Crushed Nuts, Chocolate Flakes, Sprinkles, Melted Chocolate Method 1. To make the truffle mixture, place the cream in a saucepan and place it over low heat. As soon as it simmers, remove it from the heat. Add the chocolate and stir until it fully melts under the residual heat. Place in the vanilla extract and butter and stir until the butter melts and the mixture looks glossy. 2. Pour the truffle mixture into a shallow dish or tray and place into the fridge until it sets. This will take roughly 1 hour. 3. Next, portion your truffles using a teaspoon (heaped). You should get 20 to 25 truffles depending on how big you make them. Roll them into the balls and if you find they have melted quite a bit, place them back into the fridge for 10 minutes to firm up a little bit. 4. Roll your truffles in your chosen toppings and enjoy! Tom's Tips: Keep in the refrigerator for up to one week and in the freezer for three months using an airtight container.
