Cherry Tomato Pasta (Serves 2 – Generous Portions) Ingredients 450g x Cherry Tomatoes, Halved 2 x Garlic Cloves, Thinly Sliced 25g x Fresh Basil Leaves 20ml x Olive Oil 170g x Dried Pasta (or approx. 85g per person) Salt and Freshly Cracked Black Pepper, to taste Method Prep the ingredients:Halve the cherry tomatoes, thinly slice the garlic, and pick the basil leaves from their stems. Get the pasta water going:Bring a large pot of salted water to a boil. Sauté the tomatoes:In a large frying pan over medium-high heat, add the olive oil and cherry tomatoes. Season with a pinch of salt and cook for about 1 minute, just until they begin to soften and blister. Cook the pasta:Add the pasta to the boiling water and cook according to the package instructions. Build the sauce:Add the sliced garlic to the tomatoes and cook for the rest of the pasta cooking time, stirring occasionally, until fragrant and softened. Add the basil:When the pasta has about 1 minute left, stir the basil into the tomato mixture and let it wilt. Combine:Transfer the cooked pasta directly from the pot into the pan using tongs or a slotted spoon. Toss everything together until the pasta is well coated in the sauce. Adjust seasoning with salt and pepper as needed. Sticky Toffee Pudding Recipe Serves 6 to 8 Ingredients For the Pudding: 250g x Dates, pitted and chopped 175–200ml x Boiling water 1 x Black tea bag 1 tsp x Bicarbonate of soda 100g x Unsalted butter, softened 150g x Muscovado sugar 2 x Eggs 50g x Golden syrup 100ml x Milk 175g x Plain (all-purpose) flour 7g x Baking powder For the Toffee Sauce: 170g x Muscovado sugar 200ml x Double (heavy) cream 60g x Unsalted butter Method 1. Prepare the Date Mixture Begin by placing the boiling water into a saucepan. Add the tea bag and allow it to steep for 2 minutes, then remove. Stir in the chopped dates and the bicarbonate of soda. The mixture will foam slightly. Cook over medium heat for about 5 minutes, until the dates have softened and broken down. Remove from heat and allow to cool. 2. Make the Batter In a large bowl, cream together the softened butter and muscovado sugar until well combined.In a separate bowl, whisk together the eggs, golden syrup, and milk. Gradually pour the wet mixture into the butter and sugar, mixing continuously until fully incorporated. Next, mix in the date mixture. Sift in the flour and baking powder, then gently fold through the batter. 3. Bake Pour the batter into a greased oven dish or cake tin. Bake in a preheated oven at 170°C (340°F) for 45–50 minutes, or until a skewer inserted into the centre comes out clean. 4. Make the Toffee Sauce Place the sugar, cream, and butter into a saucepan. Heat gently over low heat, stirring until the sugar has dissolved and the butter has melted. Continue to stir until the sauce is smooth and glossy. 5. Serve Cut the sticky toffee pudding into portions and generously drizzle with the hot toffee sauce. Serve with cream, custard, or a scoop of vanilla ice cream. #stickytoffeepudding #recipe

How I make Fish Tacos 🌮 Monkfish Tacos Makes 4 Ingredients 200g x Monkfish 1 x Lime (Zest & Juice) 3 x Cloves of Garlic (Minced) 10g x Coriander (Chopped) 40ml x Olive Oil Salt & Black Pepper Mango Salsa 1 x Mango (Diced) 1/2 x Medium Red Onion (Finely Diced) 15g x Coriander (Chopped) 1/4 tsp x Chilli Flakes Juice of 1 Lime Pinch of Salt Avocado Puree 1 x Ripe Avocado 1 x Garlic Clove 100g x Yoghurt, Creme Fraiche or Soured Cream Juice of 1 Lime Salt & Black Pepper to Taste You will also need Small Tortilla Wraps Crunchy Lettuce (sliced\shredded) Fresh Coriander (to Garnish) Lemon Wedges Method 1. Cut the monkfish into large bite-sized pieces and place them into a bowl. Add in the zest and juice of a lime, the garlic, coriander, olive oil and a pinch of salt and black pepper. Mix and leave in the fridge until ready to use. 1. To make the mango salsa, place the prepared ingredients into a bowl and mix until well combined. 1. For the avocado puree, place the ingredients into a blender and blend until smooth. Season to taste with salt and black pepper. 1. To cook the monkfish, place a frying pan over medium heat and allow it to heat up for 2 minutes. Add in the monkfish leaving most of the marinade behind in the bowl. Cook for 2 to 3 minutes on each side until completely cooked through and lightly charred on the outside. 1. To serve place some lettuce onto the centre of a tortilla and spoon over the avocado cream. Next, place on 2 or 3 pieces of monkfish and a spoonful of mango salsa. Finish with a squeeze of lime and some fresh coriander. Enjoy! #fishtacos #tacos #recipe

Coconut Fish Curry Ingredients Serves 4 Curry Paste 3 x Garlic Cloves 25g x Fresh Ginger 1 x Red Chilli 20g x Carriander (stalks included) 1 x Small Onion or Shallot 5g x Mild Curry Powder 4g x Turmeric 2g x Ground Cumin pinch of Salt 50ml x Water Curry 500g x Cod Fillets 400ml x Coconut Milk 10ml x Soy Sauce 20g x Sugar Juice of 1 Lime To Garnish Sliced Chillies Fresh Coriander Lime wedges Method 1. To make the curry paste, roughly chop the garlic, fresh ginger, chilli (leave the seeds in if you like it hotter), and onion. Add the remaining curry paste ingredients to a blender and blend. 2. Cut the fish into large chunks. Place a frying pan or skillet over medium heat and pour in the curry paste. Heat up and cook for 3 to 5 minutes to release the flavours. 3. Next, stir in the coconut milk and bring it to a simmer. Add the sugar, soy sauce, and lime juice. Simmer for 5 more minutes. 4. Place the fish into the pan and gently poach in the simmering curry for 5 more minutes or until the fish flakes away easily. 5. Serve and finish with more fresh chilli, coriander and a lime wedge.
